I've heard it mentioned that those of us who are lactose intolerant can actually digest raw milk and cheeses/yogurts made from raw milk. That what we're all missing are the natural enzymes & bacteria that get cooked away during the pasteurization process, which are necessary for digesting the dairy in the first place.

It's an interesting theory, but one that I'm kind of scared to test, personally. Guess I'll have to at least try some of your raw cheeses the next time I visit!
