Your steaks are ok rare but sausage should be cooked through because pathogens are throughout the meat.When meat is ground, the surface (where the pathogens start out) gets introduced to the middle and the pathogens multiply everywhere. When they are only on the outside, they get killed by the heat contact on the surface of the steak.
