Beautiful post! I'm sorry you've had to suffer a turn of bad health. It infuriates me that what gets passed off as "healthy food" these days actually makes people sick! Here's hoping your return to traditional foods & fats will help you make a swift recovery.
Wow, what a journey you're on! I hope the NT style of eating gives you lots of energy and good health! It's tough flying in the face of cultural "medicine" and "diet" advice. Eating full fats is definitely counter-cultural! Best of luck!
